Stay Happy

So the other night I cooked with the PC Blue Menu Worlds Best Meatless Seasoned “Chicken” Breasts for the 1st time. I was a bit apprehensive because I had defrosted 3 of them the night before and marinated in a spicy peanut sauce. Then, as I was going to actually make the dinner, I noticed the box said ‘use frozen.’ I shrugged it off thinking whatever- no biggie. Well the ‘meat’ I put in to marinate had become quite soft and no longer in the chunks I had cut them into. My plan was to skewer them and make like a traditional satay, over rice…I still did that, but it was messy. I’m not gonna lie here folks, very, very messy because the product was so mushy. I lost a fair bit of it which I ended up cooking into the extra sauce that I basted the skewers with as they cooked.

I then proceeded to cook at 350 degrees, and got some rice cooking and veggies steamed…and served up with fresh spinach as well. The result was ABSOLUTELY FREAKING DELICIOUS. My Guy even agreed it was extremely tasty and he would eat it again.

I have big plans for this product and will try cooking from frozen next time. I love the price, (in Canada $12.99 for 8 HUGE breasts) and it’s a gardein product still. Not only is it more economical for those of us on a budget, but the size is considerably larger than the gardein frozen breasts. Stay tuned for more recipes and ideas!

On my last post I was talking about my iPhone and all the apps available out there. I did download the Gratitude Journal by Happy Tapper and so far, so good! It makes you think each day and come up with what you TRULY are grateful for in your life. I used to do this in a lovely notebook each night before bed, but that sort of got neglected so I’m hoping I can pick up where I left off with this cute little app. Now this next bit is REALLY IMPORTANT so listen up: Make sure your phone camera/pics is not set to show your location. This would mean if you post any pics online, then anyone from stalkers to pedophiles can find your location via that picture. If you must post pics online- and we all love to do it because we want to share with our loved ones- just ensure this is set to the off position.

I’m a Vegetarian so no, I don’t want any Fish OR Chicken…

Here's one guy who deserves HIS label!

I get this all the time…I ask servers in restaurants if they have any vegetarian specials (usually after they spend 2 minutes telling me about the fantastic steak deal that’s on…) and they point to the menu and say, “Of course! We have chicken and fish and…” At this point they usually stop in mid-sentence because I’m banging my head against the table muttering something like, “Vegetarians do not eat fish or chicken! Vegetarians do not eat fish or chicken!” I look up from the table to see the innocent, wide-eyed look of a deer caught in the headlights. The poor souls haven’t a clue.

I don’t eat fish or chicken. I do however partake in the occasional dairy product and I say ‘occasionally’ because to do so more, hurts my tummy. Alot. I don’t call myself a Vegan because I eat eggs, and I eat cheese (sure one could say Lacto-Ovo)…a Vegan eats NO ANIMAL PRODUCTS WHATSOEVER. Being a Vegan is a very strict practice and it’s one I tried to stick to, but alas, I didn’t make it. I’m happy with my choices now…I’m just not happy with all these silly labels floating around out there.

If you are eating LESS meat than you used to, fabulous. I’m ecstatic for you that you’ve made that decision, but do you really need to call yourself a Flexitarian of all things? So this would mean practicing Catholics, who have long since abstained from eating meat on Fridays, are Flexitarians too? Hmmm. Opens up a whole other chapter doesn’t it? I love that people are practicing eating less meat, but does there have to be a name for it?

I have even heard this gem thrown around: West Coast Vegetarian (they eat fish). Call me crazy but in my dictionary, that type of person is usually referred to as a Pescatarian. I’m not sure if it’s cool to have a label to identify what you eat or if people think maybe we Vegetarians are lonely and need the company?

I’m usually not this rigid….but lately this one has been really, really bugging me. I’m trying to relax about it…in the meantime, go see what all the fuss is about over Meatless Mondays and see if you can incorporate it into YOUR lifestyle.

But for heavens sake, don’t make up some loony label for it!
